A Celebration of Breads

The breads we are making this year are a bit out of the mainstream. It is time to branch out and show our colors! Some prior experience in making bread is helpful.

Peace-Meal Bread

This has been a famous farmhouse loaf in New England kitchens for more than 150 years. When white flour was scarce, often in wartime, this blend of cornmeal, rolled oats, and whole wheat flour was added to the flour to make it go farther. Previously this was called War Bread. I have chosen to call it Peace-Meal Bread. Each recipe makes two loaves.
